when pulling a motor and gearbox out, do you have to seperate the gearbox from the motor?

Will i need a different speedo cable when replacing a 4 speed with a 5 speed gearbox?

question #1 no u dont have to seperate them u just undo the 4bolts on the "quadrant box" arond the gear stick and pull that of, make sure u put the box in nuetral before u take the stick out.

No you don't need to separate them, but what are you pulling out and why? If your changing boxes and/or clutch, you have to undo the bellhousing bolts anyway, why bother pulling apart the electricals, fuel, exhaust and cables to pull the motor out too. If you're just pulling the motor out, you can leave the tailshaft, gearbox cross-member, handbrake and speedo cable, and gearbox electrics alone. My experience has been this, I can pull out a motor or a box on my own, but together requires two or more to get the angle you need from the box to clear the firewall without scratching the shit out of it. You've also got to lift the whole lot higher so make sure you've got a high garage/carport roof.
